Hi Friends! I hope you had a good weekend! I spent the weekend in the kitchen, as I’m still busy canning the veggies from my garden. I must say, it’s been a stellar year for our vegetables. I’ve got a few zucchini left – I made hot pepper jelly with a few, which turned out so well that I’m going to make more for gift giving this Christmas.
As we’re starting to get more frost advisories, I picked the remaining tomatoes and cucumbers, as I can’t be bothered putting out sheets and tarps every night! So I’m going to make chow-chow with those. All that’s left in the garden are the carrots and beets. I’m going to pickle the beets, and if enough are leftover, I want to make some of my Great-Grandma’s relish (if you’re interested in this beet relish recipe, which is DELICIOUS, click on the recipe tab at the top of this page). The carrots are going to be canned with our potatoes for soups and stews over the winter months. I’m also on a ‘dehydrating’ kick right now, and have started drying a lot of vegetables to keep in jars. Right now I’ve got red and yellow peppers and celery in the dehydrator. It’s so nice to see the variety of dried veggies in jars, which also saves a ton of space in our freezer!
Yesterday we started moving the remainder of wood from last year from the shed to our basement, as we’ve got about 7 cords of wood coming later this morning. Brian will split it and I’ll stack it into the shed in the evenings this week. BIG job and lots of work, but nothing beats the heat from a wood stove, so it’s worth it! Aside from the canning and our wood, I’ve yet to winterize my flower beds, pack away my dahlias, and plant tulips and other spring bulbs. This morning I transplanted some “Pink Turtlehead” plants that Brian’s mom shared with me. I can’t wait until they get established and grow nice and big in the yard! I’ll tell ya, every day is a BUSY day! I sure do love our quiet little life out in the country though.
