Hello, my friends!
I hope you are doing well and enjoying the beauty of this cosy autumn season. It’s been a busy time around here as my catering season wrapped up, and I’ve jumped right back into canning, gardening, and, of course, trying to squeeze in a bit of stamping too!
I just finished a fresh batch of pickled beets, and I’m so happy with how they turned out! I’ll be sending some jars in today’s mail for my Dad, who loves these beets (which is my Grandma Zinck’s recipe).
There’s something so satisfying about preserving the garden’s goodness to enjoy all year long, isn’t there? This past week I also canned 8 quarts of turkey stock, 2 quarts turkey soup and 3 quarts of turkey meat, leftover from Thanksgiving. Next up I will be canning the rest of the potatoes from our garden – and making jelly from the leftover beet juice (an OLD recipe but sooo yummy).
We’ve also been soaking up the last bit of warm sunshine – it’s been gorgeous, with temps close to 20′! Our sweet Cooper has been enjoying the sun on his blanket during these beautiful fall afternoons, and I just had to snap some photos of him soaking up those rays.
Life’s simple moments are the best, don’t you think?
